If you can wait until next Tuesday afternoon I will ask for you when I am visiting all the professional kitchen shops in Shanghai street - they all sell the professional knives - and I will look out for a guy with a knife sharpening stall.

Sorry, but no matter if you buy a wet stone or steel, you'll be ruining your knives if you haven't been taught how to use them.
Try looking for stones that have proper directions.
I know, my knives are worth over HK$1500 each for the larger ones.
And I'm a chef.
Don't as mentioned go and have them done in the local shops, they rarely do good quality knives, and the way they hack at the cleavers is fine, as they only need to give the knives a short sharp, not a long edge sharp as accustomed to Western knives.
Oh... well if you are getting cleavers done then sorry... go for it.
Sharpening knives is at no means an easy job.

The Shinkansen, made in Japan by Master Cutlery, is what I use: no skill needed. It has two small sharpening stone wheels set up beneath a plastic dome with slots cut into it so you don't get the knife in the wrong place. You put the knife into the slot and pull it along the wheel towards you a few times. Done. I think the people who make this also make Global knives, which is a quality brand. Unfortunately, I have no idea where/whether you can get the Shinkansen in Hong Kong.

frizzy, i know the product you mention, but again, when you run your knife through it, you will see there is a heap of metal coming off the knives... not desirable and again a "short sharp edge." I know global, it's a good knife if you've never used a trident or dick knife, as they are very light. i can't use them as i'm accustomed to a weighted knife.
Mon, if you haven't found a sharpener, then leave your email and i'll invite you to my work. my guys will show you how to do it and we may even have a stone around for you.

Macobee, The range of Global knives are available in the kitchenware store in Prince's Building (upper floors). The name escapes me now, but I'm pretty sure they're the only kitchenware store in that bldg. They're famous for the dimpled handle and balanced weight.

Rope guy... yau ma tei??? spell check??? shanghai street have steels.
if you put steel in left hand, knife in right, blade edge towards ground, cresent will be away from you (most serrated blades are designed for Right handers.. go figure.)
Have the blade between you and the steel, and you basically go down 2 inches at a time and up, you need to hold the blade at 15 degree angles and not change movement for best results.
C Globes are a good knife, some chefs just cannot use them as they are so light!! working with knives for 12 years, and these came out.. just too late for me!!

macobee.... flat out actually.. need to shut down for an hour or so now and then.. and you'd know that with over 120 chef i'm not really relevant in the day to day cooking scene... 80% of my time is actually spent in front of the pc.. not that i like it.

Macobee, yes thanks that is the name. If you do get a chance let us know your professional opinion.
Conordec, I found the prices much better online, even after shipping. Panhandler is good for the tactile experience though. They're just for home use and a step up from (forgive me, please) Ikea knives, so I'm very happy with them! They also have got some optional attachments that snap onto the blades to help you keep the correct angle when sharpening with a stone.
