Banana Flower Salad

1. Preparing the banana flower/bell:


Remove outer purple leaves and any unformed ‘banana fingers’ until a firm white core or ‘husk’ is revealed. Put outer leaves aside for garnish. Wash husk thoroughly and then slice in half long ways. Slice finely (approx 2.5 mm) across husk halves. Bring a small saucepan of water to the boil with a pinch of salt and a squeeze of lemon juice. Blanch the banana flower slices for approx 1-2 minutes. Then drain and refresh in cold water. The flowers may turn dark purple! Don’t panic! This is normal. Drain and pat dry in a tea towel. The banana flowers are now ready to use!

Witley / Inajar : where in Hong Kong you can get hold of the Banana flower/bell ? I can only have it in restaurant, would be nice to make it at home.


By the way, never experience any delhi belly situation.
