I think you should keep it simple. A good potato salad is just potato, spring onions, parsley, chives, s&p and a good mayo...maybe add a quartered egg to the top but do not mix coz some people don't like it. Tastes better when sits in the fridge overnight. But if you want to use mint, I would make it more of a persian or moroccan style and base it on sour cream (light), cumin, S&P, onion, mint and coriander.

Ohh a good potato salad has to have eggs! And a hint of mustard. Mayo has to be Kraft Real Mayonnaise. Otherwise a home made mayonnaise.


Actually a good potato salad depends on the country you are from and the people who will be eating it. German potato salad is different from American. Depending on the cultural background, what one finds appealing, others might find lacking in taste.

I am American but use my grandma's receipe (she is German) and always puts in diced pickles and some cubed danish gouda... delicious. I think high quality mayo is the key ingredient and I prefer Best Foods which is a bit tricky to come by but well worth the effort

I do think that eggs are a necessity in a good potato salad. Onions as well. BUT what really gives potato salad a special kick is dressing the potatoes while they are HOT, (after being cut up) with olive oil and red wine vinegar. Totally changes the flavor and makes it yum.
