Hi guys. I'm moving from mainland China to Hong Kong next month. I will have 11000 HKD left after my apartment rent Etc. as expenditure I only really drink once a month and tend to enjoy running and seeing some local views and sites. Will this salary be enough to live on seeing as I don't spend a lot. I'm also a vegetarian so food expenditure Is usually low. Also would I be able to save some money on this?

It sounds as though you are locked in to the move so you will find out soon enough. I know that I could not live on $11,000 a month on food and transport, even without booze.
Have you factored income tax into your calculations? Do you hope to do any travel while you are here? Do you get medical insurance?
Have you considered dental visits? What about your phone, tv, etc?
Trips back to your home country?
And then add 10% for contingencies.

I have medical insurance paid for my only outgoing would be a SIM card transport and food and drink. I have loved in mainland china for a year so I really do just live like locals here. I eat what they eat and drink what they do etc. I prefer that way of life

Apologies looked at my salary left wrong, I will have 13000 khd left. Im not planning to travel anywhere apart from home for Christmas in which i have already purchased my return flights. I'm looking to cook a lot my self and looking to try save 2500 to 3000 hkd a month? How much does monthly travel with an octopus card cost?

13,000 hkd isn't alot to last you until Christmas. Will you be working as well?
You need to figure out and factor in the cost for the following:
- Rent, which is your biggest expense
- Electricity (AC), water, internet, TV
- Food. Even if you dont eat out alot, it will add up.
- Meetings: Business meetings or casual meetings. I know that i couldnt sit at home all day, everyday.
- Transport. Octopus, taxis, airport express.
- Entertainment and household goods: renting movies, books, furniture for the house etc...
Perhaps a better description of what you are trying to achieve living in HK? Is it just a place to stay... or are you a student?
