Does anyone have a good one to share with me (or anyone else reading this thread)? And no, I would NOT like Rache Green's recipe involving beef sauteed + peas + onions! I'm not overly fussed about alcohol but if your recipe comes with it, it's okay too :)

here is my recipe that i use its an old english recipe handed down by my mum.
what you need.
jam filled sponge roll
jelly (port wine or strawberry flavour)
custard
cream
optional fruit
cream sherry.
first cut a jam filled sponge roll into slices. If you can't get a jam filled sponge roll. then a plain flat sponge and some strawberry jam will do.
So cut up roll or break up sponge. At this stage if you want alcohol add cream sherry, has to be cream sherry dry or sweet will not do. just a little over the cake. If you want to add tinned fruit add now. pears or peaches are the best. pour the jelly that you have made over the sponge.
let set
so if you do that in the morning or late at night so the jelly can set.
make the custard and make it thick. if you make the custard yourself let it cool down before you put on jelly or it will melt the jelly.
then add thickend cream on top. and decorate with whatever you like.
