If you're not a Cantonese speaker, basically saying that your conversation can be heard by a third party with some software that can be installed in 15 minutes. Your conversation can also be heard even when not talking to someone.

If someone wants to listen to my conversations, they will probably find a way. I won't say up nights being paranoid about it.
I doubt they'd pick up anything very interesting anyway. Criminals have "better" things to do that snoop on random cell phone calls in the hope that they will lead somewhere. If it's really important I take precautions, like using one-time passwords for banking transactions online for example.
