instead of using mayo, i sometimes use cream cheese or the cowbell triangle slices type to make a pate of some sort to top my greens.

the basic recipe is...

tuna, mayo, chopped onion, lemon juice...simple and perfect.

to mix it up...

i would recommend quickly saute the onions first. it brings out a different and yummy taste to the onions. then add some kind of nut to it...almond slivers, cashews. definitely add chopped celery and boiled egg as well. i've also seen sultanas (raisins) added to it or you can always go for fresh green grapes.

wrap into a tortilla with some fresh mixed greens and it's perfect. if you use bread...always toast. does wonders for a sandwich, tuna or some other filling.

Instead of using chicken in waldorf salad, sometimes I subsitute tuna--

1 can tuna chunks in sunflower oil, drained

2 apples, cubed (soak in water with lemon juice)

1 potato, boiled and cubed

1/4 cup diced celery

1/2 c chopped walnuts

mayonnaise

juice of 1/2 lemon

salt and pepper

I always use pickle relish and sometimes finely chopped celery for some added "crunchy" texture. Can also try adding a little fresh dill to the mix...

fresh tarragn, fresh scallions chopped up with a boiled egg and albacore. Mustard and mayo to taste. Can't be beat.

Tuna, mayo, chopped sweet pickles, dill (dried, but fresh would be good too). I tried using dill pickles but didn't like it so much.

Tuna in oil (sirena brand, italian style), sliced red onion, diced fresh tomato, diced bread (fresh white or oven dried), lemon juice, salt & pepper....simple italian salad, sooo yummy!
