Feta is, officially, a white Greek cheese, salty and semi-firm, and traditionally made from sheep’s milk.

Typically, it is stored in brine (a strong salt solution), which preserves its freshness. Kept in salt brine, feta can be stored almost indefinitely.

To decrease its salty quality, you can soak the cheese in spring water or milk for a few minutes before serving. (With a tip of the hat to my housewatcher Frossyni on Kythnos Island, Greece and a g-r-e-a-t cook.)

I buy the feta in olive oil with olives in a glass jar - love the taste too - it stores really well if I buy the fresh stuff and do the same thing.
