Chef Bao La takes a two-night departure from Saigon with a special menu showcasing the culinary memories of his recent travels from North to South Vietnam. Sweet, salty, sour, tangy and spicy, with influences of Chinese and colonial French, Vietnamese cuisine is an amalgamation of flavours giving it a distinct identity.
Inspired by dishes Bao had never tried before and native ingredients he had never come across before, Voyage au Vietnam is a glimpse into a whole different side of Vietnam: “From the most southern parts of Vietnam to the northernmost tip, and all the villages in between, what an incredible journey it has been”.
