Hi,
I'm moving to Hong Kong next Tuesday, and have just one week to find a place.
My budget is about 6000HK (no more than 500 British pounds anyway). I hope to find a furnished apartment for one person, unserviced, and no more than 45 mins from Central.
I'm interested in Discovery Bay and Yung Shue Wan, but also HK island too. I want to be near enough to Central for cheeky after-work drinks and exploring on my days off, but nowhere too busy or noisy.
Ideas and advice very welcome, thanks.

Don't rush in to it. Find a serviced apartment or rent a room until you know what you want. You attitude will change dramatically within a few weeks of being here. I loved the city but want out now. Others go the other way. Big decision is HK Island or Kowloon. Where are you working? You are near the bottom of the range for apartments but they exist.

You should try places like Tsing Yi, commutable by the Tung Chung line, which is enroute to the Airport. Looks far on the map but because it's on the MTR, it's not so bad.
