If your new business is registered as a company, the name is already protected in the country where it is registered.

You can further register a trade mark to slap on things your produce.

General ideas to run a business, assuming it is not patentable, can be considered as trade secretes, if they are none obvious. No registration is needed, but the cost of going after somebody is high. (high standards of proof.)

Copyright applies to things you publish or distribute. Check with an IP lawyer to see if it needs any registration in HK. In the US you don't, you just need to write your name on it, and say something like "all rights reserved."

Patents can be used to protect specific designs or ideas in some cases. Application is required, and not cheap.
