Your company can collect from customers the consultancy fee. As long as you are not working in HK, you are ok. The next step is to have your HK company sponsor you to get a visa.

err...as a US citizen make sure you get the US tax side sorted not just on a personal level but on a company level. E.g. I know in the UK company residence may depend on where the directors are resident etc and not just where the company is incorporated. Also, you will need a visa if you are ever working in HK.
