I'm an American now living in Hong Kong and have a work visa with my company. I will be in HK for at least 5 years. My wife is a Japanese citizen. Wanted to ask what documents are needed to apply for a dependent visa for my wife and if anyone can recommend an attorney who specializes in this area. Thank you.

You don't need to employ an attorney to do this for you. That would be a waste of money.
You need to fill in a bunch of forms and take them to Immigration.
You will need: Her passport, your marriage certificate, her birth certificate, your HK ID, your passport with your visa, proof of your salary (bank statements or employer letter). That is pretty much it. It is not a very painful process.
