How do you persuade/influence a man?

I have a boyfriend who is of a stubborn nature and when I suggest something such as watching a certain movie or as he likes hiking, going on a particular hike, it seems like he wants me to 'convince' him. When I give him a reason to do it, he still doesn't seem that interested or has to think about it for a few days first before he says yes ...

In fact, in the past I have caught him in doing things he said he would never do, e.g., dancing. But then he says he was 'convinced' or persuaded to do it. All of this has not given me a very good impression of his personality but I am interested in how women out there go about persuading or convincing someone to do something? When he suggests something for us to do, I often agree as I want to show an interest in his activities . . .
