You will still need a China visa. Yes, you will be on a dependant's visa and will be able to work without a sponsor.

and your dep. visa (since your sponsor is local) will typically be for 3yr duration...if you are dependent on a emp. visa holder, it is for the duration of their emp. visa

First dependent visa is valid for 1yr, then when you renew you get 3yrs and final 3yrs to make the 7yrs. If she dies then go to Immigration. They will listen to your reasons to stay. People have been allowed to stay after getting divorced and went on to complete their 7yrs.
