Certain fats, such as saturated and trans fats, increase the risk for certain diseases. Good fats, such as the monounsaturated and polyunsaturated fats, lower the risk. Therefore you need to try to reduce the saturated and trans fats (those with a higher affect on your LDL levels).

But which is what...

Monounsaturated fat (which lowers LDL and raises HDL) is found in olives, olive oil, avocados, canola oil, peanut oil, cashews, almonds, peanuts, and most other nuts.

Polyunsaturated fat (lowers LDL and raises HDL) is found in corn, soybeans, safflower oil, sunflower oil and fish.

Saturated fat (raises both LDL and HDL) is found in whole milk, butter, cheese, cream (including ice cream), seafood, red meat, chocolate, palm oil and anything made from coconuts.

The worst one, trans fat, which New York has ‘banned’ raises LDL and lowers HDL. It’s found in most margarines, vegetable shortening, partially hydrogenated vegetable oil; deep-fried chips, most fast foods and most commercially baked goods.

There have been some studies to analyse the effects of mono- and polysaturated fats on LDL and HDL levels. It appears there is no significant difference but triglyceride levels were modestly lower for those on polyunsaturated fats diets. Please note though I don't have the most up-to-date research on this.

Monounsaturated like olive oil is natural been available for millennia and nobody knows the answer for sure. So, stick to natures own.

olive oil. No way!! Hey come on purpose is not to increase unsaturated fat but to reduce the saturated fat. Olive oil is 14% saturated. We have better options like canola 6% only. Why I asked the question was so that I could decide between canola(higher monounsaturated fat) and corn(higher polyunsaturated fat).
