Hi!
We are three people in my family that are lactose intollerante. We use almod-"milk" or oat-"milk" for baking and coocking. My kids don't like soymilk or ricemilk that are more common. You can find this diffrent types of "milk" in the sektion where the stores keep the UHT-milk and things like that (usually not in the fridge sektion). Oatmilk are great for pancakes etc. You may add an extra egg though. As you mother in law probably is older she has to maintain her bonemass - there are orange juice that has extra calcium. It cost more but it's worth it, not to get fractures when you get older!
Fermented milk usually has less lactose, like yoghurt and cheese (thats been matured for more that 3 month- the cheese, not the yoghurt!). She simply has to try how much lactose she can tollerate. It varys among people and as well during time.
She may also try to reduce the intake of beans, peas and corn - some lactoseintollerant people also don't have the ezyme that break down the suguarmolecyles in those vegetables. But try one thing at a time.
Good luck!

I am also Lactose intollerent, Had it confirmed by gastroscopy and biopsy, there are varying degrees, and I apparently have total Lactose intolerance, I have got used to having soya milk, I had to have a lot of my medication changed also, as a lot of tablets contain lactose to bind them, advise your mum to steer clear of chocolates, cheese, butters and some margarines etc, etc some baked beans in the cans also contain lactose, so if she is severely intollerant she should check the can labels. I must say when i was first diagnosed i was devastated at the amount of foods I couldn't have but I'm used to it now, and you do learn to substitute other things in the diet to make life semi normal again, it is better than ahving debilitating diarrhoea 25 times + in the day and loosing lots of weight like I did, I thought I had a terminal illness before Hospital found out what was wrong.
