Changing from visitor to sponsored employee

My sis-in-law is a qualified Math teacher in England and is hoping to come out to HK for a visit to see if it is a place where she could possibly live/work long-term.

As a Brit she gets 180 odd days to visit HK without visa and hopes to go around schools to see if she may get employment & sponsorship, but I've checked immigration website and it clearly states:

"visitors not allowed to change their immigration status after arrival (unless exceptional circumstances)" - so does this mean even if she's offered a sponsored position she can't take it straight away?

Your sister-in-law may enter Hong Kong as a visitor, but she must first apply for a work visa if she is offered employment. Both the employer (sponsor) and employee must go through the work visa application process, which means that she cannot take any position “straight away.” She may accept an offer but should not begin working until the visa has been formally approved and issued.

If she gets a working visa during her visit, and she doesn't want to go back to the UK she may be able to go to Macau and then come back using her work visa. I don't think she needs to be out of Hong Kong when she is applying for her work visa. You can alway check Immigrstion website or send them an email.
