Hi, I'm interested in finding a good tailor with good fabrics (all from medium to high-end quality) but also a great price.
I have looked around on the island, but it seems a bit overpriced for the fabrics if you compare to TST. I'm not a fan of the touters in TST though, it seems a bit more difficult to navigate those tailors.
Any recommendations?

Yes, it is in TST but Daniel does not employ touts. He gets customers purely from referrals. Not the cheapest but quality does follow price to a certain extent.

I highly recommend Fletcher Jones Custom Tailoring in TST. He's from Shanghai and has about 40 years experience, and because his small shop the prices are very very good, especially for suits. (compare about HKD 1,500 cheaper for same fabric at Sam's, or any other Tailor on HK Island) You can find him on facebook, or on his site:
