Does anyone know of space in Central/Sheung Wan that allows office by day but still can stay late or overnight (miss the Ferry/too full/etc)?

Doesn't exist in HK - at least not legally. Either wholly residential or office - not both.

If you own the property yourself, and there is 24 hour security,
you might have a touch more flexibility in some buildings.
But any landlord in a commericial or industrial building is going to ask you to sign a lease that says: "Not for Residential Use", and so if you "stay over" you will likely be in violation of the lease.
That is my understanding, but will happily defer to any lawyers who may want to post, informed by their greater knowledge of the applicable laws

There are lots of office spaces that have some provision for a pantry, washrooms & rest area, not suppose to be residential but with judicious use one can have "late night work projects" will be very hard to fall afoul of any regulator.
