I will hopefully be transferring to HK with my current employer and will be applying for an Employment Visa.
The application process does not require any declaration of convictions and, despite my employer being aware of my (minor, driving related) conviction, I have been advised not to declare it or draw attention to it in my application process, given it is not requested as part of the application process.
Are there any consequences for me or my employer in not bringing it to the attention of immigration?

Possibly Hong Kong, if your only conviction was a minor driving offence, you have nothing to worry about.
If you had been convicted of a very serious offence I doubt you would get a visa at all.
In any event, on the declaration page of the Immigration Department application form, there is nothing about declaring criminal offences so you would not be making any false declaration. Don't worry.

It depends on whether or not your conviction was in Hong Kong or somewhere else. It may cause you trouble if that was in Hong Kong. However, it is really depending on how the immigration officer view the conviction. Best of luck :)
