New DH with finished contract

As our long time maid is going back home, we want/have to hire a new helper and already found one. She has a finished contract, which means paperwork etc. can be done without having to back to Philippines, correct? Which papers do we, as an employer have to submit, any special letters stating that we urgently need her help, so that she does not have to go back now?

I'm sure this has been asked before, but I couldn't find any related topic.

If you ask your helper to go to immigration (Wan Chai) and get that "pile" of standard papers for application for change of employer. Then there is a form in there that asks one of the questions whether this helper is going home or defer for 1 year, if so what reason.

That's the part you write down why you cannot let helper go home yet, you would like helper to start work immediately. However, no matter what, if your helper didn't go home last year, maximum can defer the trip home is 1 year.

That's what happened my recently employed new helper.
